Legume Ego
As part of my continuing quest to find a miracle diet that lets me eat honeybuns, taffy, and cookie dough and still weigh 110 pounds, for healthy living and a balanced diet, I’m looking into the so-called Mediterranean Diet.
I’m not sure I’ve completely figured out what I’m supposed to eat, but apparently lots of fish and olive oil, veggies, fruits and legumes. Great. Except…what are legumes (legumai?)?
My personal expert, Dr. Wiki says:
“A ‘legume’ fruit is a simple dry fruit that develops from a simple carpel and usually dehisces (opens along a seam) on two sides. A common name for this type of fruit is a “pod”, although pod is also applied to a few other fruit types, such as vanilla. ” Dr. Wiki

“Kay…clear as a bell right? Huh…what? I’m apparently looking for a seam-opening carpel. This sounds like something Sigorney Weaver would have to blast with a flame-thrower while carrying a small child on her back. But hey, if it helps me live longer and fit into a size four, wait here while I grab a fork!
Sooo…what are you favorite legumes (legumai?) and does anyone have a good recipe?

The recipes are pretty easy
Silly, you crack me up! Beans dude! MMmmmm mexican charro beans Cook dry pinto beans in water or chicken stock for two hours (you gotta keep adding liquid) with plenty of fresh onion and some beef or pork leg bones with meat (take off the fat.) When there’s only about 20 minutes left add in some fresh cilantro and call it some DAMN good bean soup! (or if you don’t want them soupy just cook the water down further, all in your preference) If you don’t feel like watching it for 2 hours just throw it all in a crock pot on low and let it cook while you’re at work. It tastes so gooooood and sinful you won’t be thinking you’re eating healthy.
Considering the junk in my trunk – BLACK EYED PEAS, Y’all! Cook them low and slow with diced ham and you are talking seriously delicious.
Then there are peanuts. Truthfully – did you ever meet a peanut you did not like? Me neither….
